I suspect that Israel would last for some time without a nuclear deterrent although it certainly would make war much more likely. Israel has repeatedly won wars without the use of nuclear weapons (although they certainly came close to using them in 73).
I'm not in favor of nuclear disarmanent not out of concern for Israel but because nuclear weapons help promote world piece in general. Nukes are one of the major reasons we haven't had any world wars in the last 60 years.
